Hyatt Regency Grand Cayman If you're looking for either a beach resort
with a full range of amenities or a business hotel with plenty of free
time options, this place fits the bill. This longtime favorite underwent
an expansion a few years ago to offer rooms directly on Seven Mile Beach
and to increase its watersports and recreational facilities. The Hyatt has the atmosphere of a country
club with the amenities of an island resort. The hotel's amenities flow
out from a great main house, which is presently closed due to damage from
Hurricane Ivan in 2004. The grounds are dotted with royal palms and ponds
are filled with colorful koi. There's a freeform swimming pool, complete
with bridges and pool bar. Blocks of guest rooms circle this central area;
Britannia Villas lie beyond, adjacent to the golf course. Shuttle service
is available from the main house to the villas and spa. During our last visit to the Hyatt we stayed
at the beachfront addition. A $15 million expansion added these 53 beachfront
suites on Seven Mile Beach. These suites have a separate living room that
includes a dining area, wet bar, work station with two phone lines, and
upgraded amenities. All suites have sea views, and these rooms are served
by a dedicated concierge. The complex is highlighted by a landscaped pool
complex with bronze sea turtle sculptures, waterfalls, and three freshwater
pools with mosaic tile designs of stingrays and other marine life. Red Sail offers a range of watersports, including
catamaran cruises on two 65-foot vessels for dinner sails, cocktail cruises,
and luncheon snorkel excursions to Stingray City. Dive boats offer one-
and two-tank trips as well as night dives. Sea kayaking, waverunners,
water-skiing, parasailing, and underwater photography are also available
as well as deep-sea, bone, and reef fishing. The Hyatt runs a ferry to Rum Point, on the
tip of the East End. (Note: At the present time, the ferry to Rum
Point is stopped due to Hurricane Ivan. Check with the hotel before making
